Stir-fried Lamb With Baby Onions

Ingredients :

12 baby onions, 260g lean lamb, 1 red bell pepper, 1 green bell peppers, 1 stalk of coriander, 18g mint leaves, 2 cloves of garlic, 1.25 cups of stock, 1T oil.

SEASONINGS:
(1) 1T lemon juice, some salt, some ground pepper.
(2) 1T ketchup,
1t ground cumin seeds, 1t ground coriander seeds, 1t chili powder, 1t salt, 1T lemon juice.
(3) 1/2t onion seeds, 4 sprigs of curry leaves.

Preparation :

1. Rinse lamb; Trim off the fat; Cut into stripes; Marinate in seasoning (1) for 45 minutes.
2. Peel and rinse onions.
3. Rinse and chop coriander finely.
4. Rinse and chop mint leaves.
5. Rinse, seed and slice a red bell pepper.
6. Rinse, seed and slice a green bell pepper.
7. Peel, rinse and mince garlic.
8. Add seasoning (2) and the garlic to a bowl; Mix well; Rub the lamb from the step 1 with the mixture; Leave it for another 30 minutes.
9. Heat a heavy-based pan over a high heat; Add 1T oil and heat over a high heat; Stir-fry the onions over a high heat for 3 minutes; Remove and drain.
10. Re-heat the pan over a high heat; Add seasoning (3); Stir-fry over a medium heat for 3 minutes; Add the lamb together the remaining marinade; Stir-fry over a high heat for 5 minutes; Add 1.25 cups of stock; Turn to a low heat; Cook over a low heat till the lamb is cooked; Add the red bell pepper, the green bell pepper, half of the coriander and half of the mint leaves; Stir-fry over a high heat for 2 minutes; Return the baby onions to the pan; Stir-fry over a high heat briefly; Add the remaining coriander and the mint leaves; Toss over a high heat briefly; Ready to serve.
