1 Strain 60g self-raising flour through a sieve to a stainless steel bowl; Add 1t baking soda and 300g full cream milk powder; Mix well; Gradually add the evaporated milk and mix well to be thick bat.


Dal Fritters

Ingredients :

300g urad dal, 8g ginger, 6 green chili peppers, 2 stalk of coriander, 10 curry leaves, 6 cups of oil, 120g mint.

SEASONINGS:
(1) 1/2t asafoetida powder, 1/2t black peppercorns, 1.5t salt, 100ml water.
(2) 125ml yogurt, 3T lime juice, 1t salt, 1t sugar.

Preparation :

1. Rinse and soak urad dal in water for 5 hours; Remove and drain.
2. Peel, rinse and mince ginger.
3. Rinse green chili peppers; Seed and dice 5 chili peppers.
4. Rinse and chop coriander finely.
5. Rinse and chop curry leaves finely.
6. Rinse mint.
7. Add the urad dal and seasoning (1) to an electronic blender and grind to a smooth batter; Add the ginger, 2/5 portion of the diced green chili peppers, the coriander and curry leaves; Blend well.
8. Add 6 cups of oil to a pan; Bring to the boil over a medium heat; Turn to a low heat.
9. Moisten a metal spatula and place 1T batter on it; Flatten the batter into a small disk with moist fingers; Make a hole in the center like a doughnut; Quickly invert the spatular into the oil and shake it gently to release the batter; Deep-fry each side of the batter over a low heat for 2 minutes till golden brown; Deep-fry over a high heat for 10 seconds; Remove and drain (repeat this step till all the batter was used).
10. Turn off the heat; Arrange the dal fritters on a serving plate.
11. Add the mint, 3/5 portion of the diced green chili peppers and seasoning (2) to the blender; Grind till smooth to be the dipping sauce.
12. Garnish the serving plate with a green chili pepper; Serve with the dipping sauce on the side.
