1 Rinse coriander; Chop most finely 2 Peel, rinse and mince ginger.

Egg Pakoras

Ingredients :

8 hard-boiled eggs, 1 clove of garlic, 8g ginger, 1 red chili pepper, 1 stalk of coriander, 6 cups of oil, 120g mint leaves, 3 green chili peppers.

(1) 100g channa flour, 1T rice flour, 1/2t turmeric powder, 1/2t baking powder, 1/2t salt, 3/4 cup of water, 1/4t cumin seeds, 1/4t ajwain seeds, 1/2t meat curry powder, 1/4t asafoetida powder.
(2) 125ml yogurt,, 3T lime juice, 1t salt, 1t sugar.

Preparation :

1. Peel, rinse and mince garlic.
2. Peel, rinse and mince ginger.
3. Rinse, seed and mince red chili pepper.
4. Rinse and mince coriander.
5. Add seasoning (1), the minced garlic, the minced ginger, the minced red chili pepper and minced coriander to a bowl and mix well to form a smooth and thick batter; Leave it for 15 minutes.
6. Rinse mint leaves.
7. Rinse and seed green chili peppers.
8. Add seasoning (2), the mint leaves and seeded green chili peppers to an electronic blender; Grind till smooth to be the dipping sauce.
9. Peel and cut hard-boiled eggs lengthwise; Evenly coat each egg with a layer of the batter from the step 5.
10. Add 6 cups of oil to a pan; Bring to the boil over a high heat; Deep-fry the eggs over a high heat till golden brown; Remove and drain; Turn off the heat.
11. Arrange the egg pakoras on a serving plate; Serve hot with the dipping sauce on the side.
