1 Rinse yellow split peas in running water; Soak in water overnight; Remove and rinse; Add to a pot with enough water covered the peas; Bring to the boil over a high heat; Boil over a high heat for 1.


Garlic Naan

Ingredients :

3 cloves of garlic, 1.5T ghee, 1T sesame seeds, some , 300g flour, 1 egg.

SEASONINGS:
(1) 1.5t instant , 2T warm .
(2) 125ml milk, 1t , 2t ghee, 1/2t salt.

Preparation :

1. Beat an egg.
2. Add seasoning (1) into a bowl and mix well; Leave it till frothy.
3. Strain flour through a sieve into a stainless steel bowl; Add the beaten egg; Mix well; Add seasoning (2); Mix well; Add the seasoning (1); Stir well; Knead into smooth dough; Cover with a damp cloth; Leave it till it doubles in size.
4. Peel, rinse and mince garlic.
5. Discard the stems of coriander; Rinse and drain.
6. Punch down the smooth dough from the step 3; Knead in 1.5t of the minced garlic; Divide into 4 equal portions; Cover them with damp cloth; Leave them till each doubles in size.
7. Preheat the oven to 190 degree celcius.
8. Roll each dough from the step 6 out into a thin circle with a rolloing pin; Brush some ghee on both sides of each circle; Arrange in a greased baking pan; Sprinkle some sesame seeds and the remaining garlic on top.
9. Put the baking pan into the oven and bake until there are brown spots (about 5 to 10 minutes); Remove to a serving plate; Garnish with some coriander; Ready to serve.
