Home-made Paneer

Ingredients :

1.5L full cream milk, 8 lemons, 650ml cold water.

Preparation :

1. Rinse lemons; Cut into halves; Seed; Juice; Discard the lemons.
2. Pour 1.5L full cream milk to a saucepan; Bring to the boil over a high heat; Turn off the heat; Add all the remaining ingredients (including lemon juice); Stir vigorously till the milk starts curdling.
3. Strain the curdled mixture through a muslin cloth till all the liquid has drained; Tie all the corners of the cloth together; Gently squeeze the wrapped milk solid; Hand it up to dry for 180 minutes.
4. Place the wrapped cheese on a flat surface; Weigh it down with a plate; Leave it till the cheese is firm (about 60 minutes); Remove the cloth; Cut into cubes; Arrange on a serving plate; Ready to serve.
