Curried Prawns In Coconut Milk

Ingredients :

480g king prawns, 230g cherry tomatoes, 1 red chili pepper, some coriander, 300ml coconut milk, some salt.

SEASONINGS:
(1) some lemon juice, some ground black pepper.
(2) 2T yellow curry paste.
(3) 1/2 tsp salt, 1 tsp granulated sugar, 300ml coconut milk.

Preparation :

1. Discard heads of prawns; Shell; Devein with toothpicks; Rinse and soak in salty water briefly; Remove and pat dry; Marinate in seasoning (1) for 20 minutes.
2. Rinse coriander; Discard the stems.
3. Rinse, seed and julienne a red chili pepper.
4. Rinse cherry tomatoes; Discard the stems; Cut into halves.
5. Pour 300ml coconut milk to a non-stick pan; Bring to the boil over a medium heat; Turn to a low heat; Add seasoning (2); Stir over a low heat till dispersed; Simmer over a low heat for 10 minutes; Add seasoning (3); Stir over a low heat for 5 minutes; Add the prawns and cherry tomatoes; Simmer over a low heat till most of the sauce has evaporated; Turn off the heat; Arrange on a serving plate; Garnish with the coriander and red chili shreds.
