Jhinga Jhalfrezi

Ingredients :

2000g prawns, 2 onions, 1 red pepper, 1 green pepper, 1 yellow pepper, 3 tomatoes, 26g garlic, 26g ginger, 20g red chili peppers, 6 5-cm-long cinnamon sticks, 6 dried red chili peppers, 20ml oil, 1 stalk of coriander, some salt.

SEASONINGS:
(1) 1T lemon juice, some salt.
(2) 23ml lemon juice, 10g ground white pepper, some salt.

Preparation :

1. Discard heads and tails of prawns; Shell; Devein with toothpicks; Rinse and soak in water with some salt briefly; Remove and pat dry; Marinate in seasoning (1) for 20 minutes.
2. Peel, rinse and dice onions.
3. Rinse, seed and cut red pepper into wedges.
4. Rinse, seed and cut green pepper into wedges.
5. Rinse, seed and cut yellow pepper into wedges.
6. Peel, rinse and mince garlic.
7. Peel, rinse and julienne ginger.
8. Rinse and slice red chili peppers.
9. Cut dried red chili peppers into slices.
10. Rinse and chop coriander finely.
11. Rinse and cut tomatoes into wedges.
12. Heat a skillet over a high heat; Add 20ml oil and heat over a medium heat; Add the dried chili peppers and cinnamon sticks; Stir-fry over a medium heat for 1 minute; Add the sliced garlic, the red chili peppers and the ginger; Stir-fry over a low heat till fragrant; Add the onions; Stir-fry over a medium heat till golden brown; Add the tomatoes, red pepper, the green pepper and the yellow pepper; Stir-fry over a high heat briefly; Add the prawns; Stir-fry over a high heat for 4 minutes; Add seasoning (2); Stir-fry over a low heat for 2 minutes; Add the coriander; Toss well; Ready to serve.

COOKING TIPS:
1. Quality prawn should not have a black dot on its head because this is a major sign that the prawn is not fresh and its head is likely to come off.
2. "Devein" means removing the ugly dark "vein" along the prawn's back, which is actually the prawn's digestive tract with a lot of sand and makes the prawn taste gritty and bad to the palate.
