Prawn And Vegetable Balti

Ingredients :

200g shelled shrimps; 1 cup of frozen green peas, 1 cup of canned sweet corn, 1 zucchini (large), 1 red bell pepper (large), 1.5t coriander seeds, 2 dried red chili peppers, 20g coriander, 2T oil, some salt.

(1) some lemon juice, some ground black pepper.
(2) 1/4t onion seeds, 4 curry leaves.
(3) 1t salt, 1T lemon juice.

Preparation :

1. Devein shelled shrimps with toothpicks; Rinse; Blanch in boiling water with some salt for 30 seconds; Remove and immediately rinse in running water; Drain; Marinate in seasoning (1) for 45 minutes; Blanch in boiling water for 4 minutes again; Remove and drain.
2. Thaw frozen green beans; Blanch in boiling water with some salt for 1 minute; Remove and drain.
3. Drain 2/3 cup of canned sweet corn.
4. Peel, rinse and slice a zucchini.
5. Rinse coriander; Chop most finely; Discard the stems of the remaining.
6. Rinse, seed and cut a red bell pepper into pieces.
7. Crush 2 dried red chili peppers.
8. Crush 1.5t coriander seeds.
9. Heat a deep pan over a high heat; Add 2T oil; Heat over a high heat; Add seasoning (2); Stir-fry over a low heat till fragrant; Add the green peas, the sweet corn and the zucchini; Stir-fry over a high heat for 3 minutes; Add teh red bell pepper; Stir-fry over a high heat for 2 minutes; Add the shrimps, the crushed coriander seeds, the chopped coriander, the crushed dried red chili peppers; Stir-fry over a high heat for 3 minutes; Add seasoning (3); Toss over a high heat briefly; Turn off the heat; Arrange on a serving plate; Garnish with the remaining coriander. Ready to serve.
