1 Rinse chana dhal; Soak in water for 24 hours; Remove and drain; Rinse and drain 2 Rinse lamb; Trim off the fat; Discard the bones; Cube; Marinate in seasoning (1) for 45 minutes.


Dal Shorba

Ingredients :

1 cup of moong dal, 3 onions, 4 cloves of garlic, 50g spinach, 1t oil, 1 lemon, 6 cups of water, some coriander.

SEASONINGS:
(1) 1/2t chili powder, 3t curry powder.
(2) some salt.

Preparation :

1. Rinse moong dal.
2. Peel, rinse and slice onions.
3. Peel, rinse and mince garlic.
4. Discard the wilted leaves of spinach; Rinse; Mince.
5. Rinse and juice a lemon.
6. Heat a pan with 1t oil over a high heat; Stir-fry garlic over a low heat till fragrant; Add the onion and stir-fry over a low heat till fragrant; Add seasoning (1); Stir-fry briefly; Turn off the heat.
7. Pour 6 cups of water to a pot; Bring to the boil over a high heat; Add the mixture from the step 6, the tomatoes and moong dal; Bring to the boil over a high heat; Cover the pot with a lid; Cook over a low heat till the dal has become soft; Turn off the heat.
8. Pour the soup from the step 7 to a blender and blend for portage.
9. Rinse and chop coriander finely.
10. Pour the portage back to the pot; Bring to the boil over a high heat; Turn to a low heat; Add seasoning (2) and the minced spinach; Cook over a medium heat for 30 seconds; Turn off the heat; Add the lemon juice; Garnish with the coriander. Ready to serve.
