Sahi Daal Shorba

Ingredients :

1.5L chicken stock, 300g yellow lentils, 100g carrot, 100g celery, 100g spinach, 50g butter, 3 limes, 1.25t cumin seeds, 3 green apples, 1 onion, 2 red chili peppers, some salt, 50g coriander.

Preparation :

1. Rinse yellow lentils in running water for 5 minutes;
Soak in water for 15 minutes; Remove and drain.
2. Peel, rinse and mince a carrot.
3. Peel, rinse and chop an onion finely.
4. Discard the wilted leaves of spinach; Soak in water for 15 minutes; Remove and rinse; Cut into sections.
5. Vein celery; Rinse and drain; Chop finely.
6. Rinse, seed and chop red chili peppers finely.
7. Discard the stems of coriander; Rinse and drain.
8. Cut limes into halves; Juice.
9. Heat a heavy-based pan over a high heat; Turn to a low heat; Add 50g butter and heat over a low heat; Add 1.25t cumin seeds; Stir-fry over a low heat till crackled; Add the yellow lentils; Stir-fry over a low heat for 5 minutes; Add 1.5L chicken stock; Bring to the boil over a low heat; Simmer over a low heat for 20 minutes; Add the carrot, the red chili peppers and the celery; Cook over a low heat for 10 minutes.
10. Peel and dice green apples; Add to the soup from the step 8; Add the lime juice; Mix well; Add the spinach; Cook over a low heat for 2 minutes; Season with some salt; Mix well; Turn off the heat; Garnish with the coriander; Ready to serve.
