1 Heat a dry wok over a high heat; Turn to a low heat; Stir-fry seasoning (1) over a low heat for 10 minutes; Turn off the heat; Cool; Sift into a mixing bowl; Remove any lumps 2 Add seasoning .


Spiced Cauliflower Soup

Ingredients :

2 potatoes, 200g cauliflower, 2 onions, 2 cloves of garlic, 8g ginger, 1T oil, 2 stalks of coriander, some salt, 3T water, 1.25 cups of plain low fat yoghurt.

SEASONINGS:
(1) 2t turmeric powder, 1t cumin seeds, 1t black mustard seeds.
(2) 4 cups of vegetable stock, 1/2t salt.
(3) 1t salt, some black peppers.

Preparation :

1. Peel, rinse and dice potatoes.
2. Rinse cauliflower; Soak in water with some salt for 30 minutes; Remove and rinse; Cut into florets.
3. Peel, rinse and dice onions.
4. Peel, rinse and mince garlic.
5. Peel, rinse and mince ginger.
6. Heat a large heavy-based pan over a high heat; Add 1T oil and heat over a medium heat; Add the potatoes, cauliflower and onions; Stir-fry over a medium heat briefly; Add 3T water; Cook over a high heat till hot and bubbling; Cover the pan with a lid tightly; Turn to a low heat; Leave it for 10 minutes.
7. Rinse coriander; Chop most finely.
8. Add the chopped coriander, the garlic, the ginger and seasoning (1) to the mixture from the step 6; Stir-fry over a medium heat for 2 minutes; Add seasoning (2); Bring tot the boil over a high heat (keep on stirring); Cover with the lid; Simmer over a low heat for 23 minutes; Turn off the heat; Cool.
9. Pour the mixture from the step 8 to an electronic blender; Blend into puree.
10. Return the puree from the step 9 to the pan; Cook over a low heat; Gradually stir in 1.25 cup of low fat yoghurt; Bring to the boil over a medium heat; Add seasoning (3); Stir well over a low heat; Turn off the heat; Arrange in a serving bowl; Garnish with the remaining coriander.
