Tomato And Coriander Soup

Ingredients :

675g tomatoes, 1 stalk of spring onion, 1 bay leaf, 3 cloves of garlic, 2 stalks of coriander, 1T oil, 3 cups of water, 2T light cream.

SEASONINGS:
(1) 1t salt, 1t ground black pepper.
(2) 1T corn starch, 1T water.

Preparation :

1. Peel, rinse and mince garlic.
2. Rinse and chop coriander finely.
3. Rinse and chop spring onion finely.
4. Rinse tomatoes; Blanch in boiling water for 30 seconds; Remove and peel; Chop.
5. Heat a heavy-based pot over a high heat; Add 1T oil and heat over a medium heat; Add the tomatoes, the coriander and bay leaf; Stir-fry over a low heat till the tomato has become soft.
6. Add the garlic, the coriander and seasoning (1); Stir-fry over a low heat briefly; Pour 3 cups of water; Bring to the boil over a high heat; Turn to a low heat; Cook over a low heat for 20 minutes; Turn off the heat; Cool.
7. Pour the soup from the step 6 to an electronic blender; Blend in smooth paste.
8. Add seasoning (2) to a bowl; Mix well.
9. Return the paste to the pot; Bring to the boil over a medium heat; Gradually add the seasoning (2) (keep on stirring); Cook over a medium heat for 3 minutes; Turn off the heat.
10. Arrange the soup in a serving bowl; Garnish with a swirl of light cream; Ready to serve.
