Balti Mushrooms In Creamy Garlic Sauce

Ingredients :

380g button mushrooms, 4 cloves of garlic, 2 green chili peppers, 1 cup of low fat cheese, 40g mint leaves, 40g coriander, 1T olive oil, 1 bay leaf, 1t salt.

Preparation :

1. Scrape off the dirt of button mushrooms; Rinse in running water; Cut into halves.
2. Rinse coriander; Chop most finely; Discard the stems of the remaining.
3. Rinse mint; Chop most finely.
4. Rinse, seed and chop green chili peppers finely.
5. Peel, rinse and mince garlic.
6. Heat a heavy-based pan over a high heat; Add 1T oil; Heat over a high heat; Add the garlic, the green peppers and bay leaves; Stir-fry over a low heat till fragrant; Add the mushrooms; Stir-fry over a medium heat for 2 minutes; Remove from the heat; Gradually add cheese; Stir well; Add the chopped mint and coriander; Stir well; Add 1t salt; Return to the heat; Stir-fry over a medium heat for 3 minutes; Turn off the heat; Garnish with the remaining mint and coriander. Ready to serve.
