Chutpate Zeera Alou

Ingredients :

1500g potato, 26g garlic, 26g ginger, 3 dried red chili peppers, 50g coriander, 10g cumin seeds, 50ml oil, some spring onion, 1 tomato.

SEASONINGS:
(1) 1L stock, 1L water, 1/2t salt.
(2) 5g chili powder, 5g turmeric powder, 20g mango powder, 1t salt.

Preparation :

1. Peel, rinse and mince garlic.
2. Peel and rinse ginger; Mince the majority; Julienne the remaining.
3. Rinse and cut off the stems of dried red chili peppers.
4. Rinse and chop coriander finely.
5. Rinse and chop spring onion finely.
6. Peel, rinse and dice potatoes.
7. Add seasoning (1) to a pot; Bring to the boil over a high heat; Add the potatoes; Cook over a high heat for 8 minutes; Turn off the heat; Remove and drain; Cool.
8. Rinse and cut tomatoes into pieces.
9. Heat a skillet over a high heat; Add 50ml oil and heat over a medium heat; Add 10g cumin seeds and the dried red chili peppers; Stir-fry over a low heat till fragrant; Add the ginger and the garlic; Stir-fry over a low heat till fragrant; Add the potatoes; Stir-fry over a medium heat for 4 minutes; Add seasoning (2) and the coriander; Stir-fry over a medium heat till the potatoes are done; Add the tomatoes and spring onion; Toss over a medium heat till mixed; Ready to serve.
