1 Thaw frozen mackerel fillet; Rinse in running water for 5 minutes; Pat dry; Marinate in seasoning (1) for 45 minutes 2 Peel, rinse and mince ginger.


Mango Rice

Ingredients :

2T ghee, 1/2t mustard seeds, 3 dried red chili peppers, 2 green chili peppers, 250g unripe green mango, 1.5t salt, 375g cooked rice, 1 stalk of coriander.

SEASONINGS:
(1) 1T Bengal gram, 1T white gram.
(2) 2 sprigs of curry leaves, 1t turmeric powder.

Preparation :

1. Rinse, seed and slice green chili peppers.
2. Cut dried red chili peppers into 3-cm-long pieces.
3. Rinse and chop coriander finely.
4. Peel, stone and grate 250g green mango.
5. Heat a pan over a high heat; Add 2T ghee and heat over a medium heat; Add seasoning (1); Stir-fry over a medium heat for 3 minutes; Add 1/2t mustard seeds and the dried red chili peppers; Stir-fry over a medium heat for 3 minutes;
Add the green chili peppers and seasoning (2); Stir-fry over a low heat for 2 minutes; Add the grated mango, 1.5t salt and 375g cooked rice; Stir-fry over a low heat for 5 minutes; Turn off the heat; Arrange on a serving plate; Garnish with the chopped coriander; Ready to serve.
