Okra In Yogurt Sauce

Ingredients :

300g okra, 500ml yogurt, 2 green chili peppers, 2 limes, 700ml oil.

SEASONINGS:
(1) 1t salt.
(2) 1t mustard seeds, 1t cumin seeds.
(3) 1/2t asafoetida powder, 1/2t turmeric powder.

Preparation :

1. Discard the stalks of okra; Rinse and cut into sections.
2. Rinse, seed and dice greed chili peppers.
3. Rinse and cut limes into halves; Juice.
4. Add 700ml oil to a wok; Bring to the boil over a high heat; Deep-fry the okra over a high heat till golden brown and crispy; Remove and drain; Turn off the heat; Set the oil aside.
5. Add 500ml yogurt into a bowl and beat; Add the diced green chili peppers, the lime juice and seasoning (1); Mix well.
6. Heat a skillet over a high heat; Add 2T oil and heat over a medium heat; Stir-fry seasoning (2) over a medium heat till pop; Add seasoning (3); Stir-fry over a low heat for 5 seconds; Turn off the heat.
7. Add the mixture from the step 6 to the yogurt mixture from the step 5; Mix well; Cool; Chill in the fridge for 30 minutes; Remove; Add the fried okra; Mix well; Ready to serve.
