1 Rinse and drain 300g Basmati rice 2 Break a cinnamon stick into halves.

Peanut Rice

Ingredients :

100g roasted and unsalted peanuts, 375g cooked rice, 2T vegetable oil, 1/2t mustard seeds, 2 sprigs of curry leaves.

(1) 3T grated coconut, 1t turmeric powder, 1t chili powder.
(2) 1t roasted white sesame seeds, 1t salt.
(3) 1t white gram, 2t Bengal gram.

Preparation :

1. Pound 100g roasted and unsalted peanuts.
2. Heat a dry pan over a low heat; Stir-fry seasoning (1) over a low heat till dry; Turn off the heat.
3. Add seasoning (2), the pounded peanuts and the mixture from the step 2 into a big bowl; Mix well; Add 375g cooked rice; Mix well.
4. Heat a skillet over a high heat; Add 2T oil and heat over medium heat; Stir-fry 1/2t mustard seeds over a medium heat till pop; Add seasoning (3); Stir-fry over a medium heat till golden brown; Add the curry leaves; Stir-fry over a medium heat till fragrant; Add the rice mixture from the step 3; Stir-fry over a medium heat till mixed; Turn off the heat; Ready to serve.
