1 Rinse chicken breast; Discard the skin; Cube; Marinate in seasoning (1) for 45 minutes 2 Rinse coriander; Chop most; Discard the stems of the remaining.


Potato Rice

Ingredients :

2T ghee, 6-cm-long cinnamon stick, 300g Basmati rice, 600ml water, 300g potatoes, some coriander.

SEASONINGS:
(1) 4 cloves, 4 cardamoms, 2 bay leaves.
(2) 1t turmeric powder, 1/2t chili powder, 1.25t salt, 1/2t garam masala.

Preparation :

1. Break cinnamon stick into halves.
2. Rinse 300g Basmati rice;
Drain.
3. Peel, rinse and dice potatoes.
4. Discard the stems of coriander; Rinse.
5. Heat a pan over a high heat; Add 2T ghee and heat over a medium heat; Add the cinnamon and seasoning (1); Stir-fry over a medium heat till fragrant; Add the Basmati rice; Stir-fry over a medium heat for 1 minute; Turn off the heat.
6. Add 600ml water to a pot;
Bring to the boil over a high heat; Add seasoning (2) and the potatoes; Bring to the boil over a high heat again; Add the rice mixture from the step 5; Turn to a low heat; Cover (leave leak); Cook over a low heat till the rice is cooked (about 15 minutes); Turn off the heat; Arrange on a serving plate; Garnish with the coriander; Ready to serve.
