1 Thaw frozen mackerel fillet; Rinse in running water for 5 minutes; Pat dry; Marinate in seasoning (1) for 45 minutes 2 Peel, rinse and mince ginger.

Spicy Cashew Rice

Ingredients :

2T ghee, 1 onion, 2 sprigs curry leaves, 200g peas, 600g steamed white rice, 80g roasted cashew nuts, some coriander, 3 green chili peppers, 4 cloves of garlic, 16g ginger, some mint leaves.

(1) 3T water.
(2) 1T curry powder, 1.5t salt.
(3) 1t mustard seeds, 1t cumin seeds.

Preparation :

1. Peel, rinse and slice onion.
2. Blanch peas in boiling water for 20 seconds; Remove and drain.
3. Rinse and chop coriander.
4. Peel, rinse and slice garlic.
5. Peel, rinse and slice ginger.
6. Rinse and chop mint leaves.
7. Rinse, seed and cut chili peppers into slices.
8. Add the green chili peppers, garlic, ginger, mint leaves and seasoning (1) into an electronic blender; Blend into smooth paste; Transfer to a bowl; Add seasoning (2); Mix well.
9. Heat a pan over a high heat; Add 2T ghee and heat over a medium heat; Stir-fry seasoning (3) over a medium heat till fragrant; Add the onion and curry leaves; Stir-fry over a low heat till the onion is soft and light brown; Add the paste from the step 8; Bring to the boil over a medium heat; Turn to a low heat; Simmer over a low heat till the oil separates; Add the peas; Turn to a medium heat; Stir-fry over a medium heat till tender; Add 600g steam rice; Toss over a medium heat till heated and well blended; Add 80g cashew nuts; Stir well; Turn off the heat; Arrange on a serving plate; Garnish with some coriander.
