Vegetarian Patties

Ingredients :

4T frozen peas, 150g frozen kernels, 1 potato (medium size), 2 slices of bread, 2 onions, 2 green chili peppers, 6 cloves of garlic, some salt, 2 stalks of coriander, 6.5 cups of oil, 2 cups of stock, 23g ginger.

SEASONINGS:
(1) 2t turmeric powder, 3/4t garam masala, 1t salt, 1/4t dried mango powder.
(2) 3T tamarind pulp, 185ml water.
(3) 3T sugar, 3/4t salt, 1/2t chili powder.

Preparation :

1. Thaw frozen peas; Blanch in boiling water with some salt for 1 minute; Remove and drain.
2. Thaw frozen kernels; Blanch in boiling water with some salt for 1 minute; Remove and drain.
3. Peel, rinse and grate potato.
4. Cut off the crusts of bread.
5. Peel, rinse and dice onions.
6. Rinse, seed and mince green chili peppers.
7. Peel, rinse and mince garlic.
8. Rinse and chop coriander finely.
9. Heat a saucepan with some oil over a high heat; Add 2 cups of stock; Bring to the boil over a high heat; Add the peas and corn kernels; Cook over a high heat for 5 minutes; Remove and drain; Cool at the room temperature; Mash; Add the grated potato; Mix well.
10. Soak the bread in water for 5 minutes; Remove; Squeeze out the excess water; Mash; Add to the smashed mixture from the step 9; Mix well.
11. Peel, rinse and mince ginger.
12. Heat a skillet with some oil over a medium heat; Stir-fry the garlic and an half of the ginger over a low heat till fragrant; Add the green chili peppers and onion; Stir-fry over a a low heat till fragrant; Turn off the heat; Cool.
13. Add seasoning (1), the coriander and the mixture from the step 12 to the mixture from the step 10; Mix well and chill in the refrigerator for 20 minutes; Divide the mixture into 10 equal portions; Roll each portion into a ball and then flatten into a patty; Press firmly with the hands so it would not fall apart.
14. Add 6 cups of oil to a wok; Bring to the boil over a high heat; Deep-fry the patties over a low heat till both sides have been golden brown; Deep-fry over a high heat for 10 seconds; Remove and drain; Turn off the heat.
15. Add seasoning (2) to a bowl and mash; Strain for juice; Add seasoning (3) to the juice and mix well to be the dipping sauce.
16. Arrange the patties on a serving plate with the dipping sauce on the side. Ready to serve.
